It is always fun participating in this Ssshhh Cooking Secretly Challenge monthly worldwide food challenge thanks to Priya from Priya’s Versatile Recipes “adding a pinch of love to everyday cooking.”

The challenge is about “cooking, chit chat and meeting a new food friend along the way!”

Perhaps you remember last month’s Are You Curious What My Secret Ingredients Are This Month? {Thermomix Assisted} where I shared Joanna’s Chilli Con Carne {Thermomix Assisted}?

I thought it was the perfect “warm and welcoming” winter dish as it is extremely cold here in Adelaide; it is winter you know!

Chilli-beans-thermomixThis month, I am very proud to introduce my “food challenge partner” as none other than Priya Suresh who has two blogs Cook N Click and Priya’s Versatile Recipes.

I have been a fan of Priya’s and her blogs for quite some time; this past April, Priya chose me for her blog series called Rendez Vous With a Foodie which I was “humbled and proud to do!”

Priya has been blogging for about 5 years and has been recently mentioned by Annie Phillip in The Hindu newspaper mentioning Priya is “regarded by peers as a ‘pioneer in food blogging’ with a penchant for coming up with ‘unique combos’ in her recipes.”

I’m getting hungry, are you?

I’ve given you some time to think about it, but now seeing a photo, What Do You Think My Secret Ingredients For The Challenge In July Could Be?

Perhaps an inside view will give my secret ingredients (as challenged by Priya) away!

Onion-zucchini-flanOf course you have guessed by now, it’s zucchini and onions; both healthy as can be!

When I saw Zucchini & onion flan from taste.com.au, I knew I would be inspired too!

As I like to minimize food wastage and use what I have on hand, I “slightly adapted” the recipe!

Serves: 6 - 8
Ingredients
  • 2 large zucchini, grated (see Notes re grated)
  • 3 small carrots, peeled, grated
  • 3 brown mushrooms, cut in pieces
  • 1 red capsicum, deseeded, chopped in pieces
  • 4 eggs, lightly beaten
  • ⅓ cup grapeseed oil
  • 1 cup self-rising flour, sifted
  • ¼ cup mozzarella, fine cubed
  • oil spray
  • 1 cup Grana Padano (or cheese of choice) grated
  • 1 red onion, cut in rings
  • salt and pepper to taste
Instructions
  1. Pre heat oven 180C.
  2. Oil spray flan tin.
  3. Place zucchini, carrots, mushrooms, capsicum in TMX bowl; speed 5, 5 seconds; scrape down & repeat if needed for personal size preference.
  4. Remove and add contents to large bowl; add eggs until combined.
  5. Add oil; combine well.
  6. Add sifted flour; stir until combined.
  7. Stir in both cheese; salt and pepper to taste.
  8. Slice onions rings. (see Note)
  9. Pour mixture into flan dish; bake for 40 minutes or until golden brown; toothpick will come out clean.

Talking about zucchinis and onions, did you know there is an Annual Zucchini Festival in Obetz, Ohio every year?; zucchini judging is taken very seriously!

Being born and bred in the US (New York), I am FASCINATED with all food festivals and the categories that are judged (you were curious too, eh?) are: BIGGEST, smallest, Most Unusual and Best Dressed; WHAT A HOOT!

So as to not leave the onion behind, this year is the 37th Annual Vidalia Onion Festival in Vidalia, Georgia in the states!

Did you know ancient Egyptians revered onions as they thought the rings signified eternity? ; like the rings on top of my flan!

I LOVE that Thermalina helps save time and money too!

I don’t know who likes playing with food more … Thermalina or me?

    Hey Joanne,

    When I first saw the picture my immediate thought was yummy. So reading the recipe, excuse me for asking a stupid question but what is capsicum? I’m never heard of that before but I’m sure whatever it is is a wonderful combination to this dish. This is one I would love to try.

    I’m hanging on to this one too. My goodness, so many great new recipes to try now.

    • Thanks Adrienne as there are no stupid questions with me; a capsicum is a sweet pepper in the States and can come in the orange, yellow, green or red variety!
      They are great to add extra “healthy” to a dish, are great in stir fries and I love them roasted! Hope this helps!

      Please note, baking times may change depending on what dish you use etc..just make sure the middle is set and a toothpick comes out clean for the flan to be done!

      If it starts to get too brown too quickly, you can always top it with aluminum foil. Please let me know how you go!

Tis the season for these ingredients here and soon we’ll be tripping over ourselves looking for ways to use up the bounty of summer zucchini, so this recipe has been bookmarked. By the way, on the tiny west-coast island where I lived for many years we had ZUCCHINI RACES at the annual fall fair. Large or small, we loved all those four-wheeled racers and this event always drew the largest crowd of all ages. Thanks Joanne, for the memories 🙂
