Are You Curious What The Secret Ingredients Could Be?

Are you as curious as me?

It is always fun participating in this Ssshhh Cooking Secretly Challenge monthly worldwide food challenge thanks to Priya from Priya’s Versatile Recipes “adding a pinch of love to everyday cooking.”

The challenge is about “cooking, chit chat and meeting a new food friend along the way!”

Perhaps you will remember last month’s What Do You Think The Secret Ingredients Could Be For July?

I loved the combination of zucchini and onion and I can now share, Joanna’s Zucchini & Onion Flan {Thermomix Assisted} did not last long!

Perhaps you would like another “inside view?”

“What are your secret ingredients for this month’s challenge?”

“Who were you partnered with?”

“And what did they create?”, I “hear” you say?

Gosh, you are very energetic today!

This month I was partnered with the lovely Shoba from Anubhavati – Tastes from my Kitchen.

We had several, but small chats about food and when I checked out her blog, I thought I would challenge her with the ingredients of semolina and peas!

Shoba created Soft & Fluffy Ravi Idlis from scratch.

It was on one of the days where I had JUST come from elbio patisserie & cafe doing a “blind taste test” of his new “healthier version” croissant and had asked Shoba Are You Curious About an AVOCROISSANT?

I was all excited and shared that I couldn’t wait to try and make a dessert with avocado and that I had recently seen Sarah’s Avocado Chocolate Marble Pound Cake from Sarah Cooks.

Hence, avocado and Dutch chocolate powder are the two ingredients Shoba challenged me with!

I slightly adapted Sarah’s recipe based on my food lifestyle in making this a “healthier avocado dessert” for me!

I also LOVE making butter with Thermalina (my Thermomix) as it is fast, healthy and economical to do!

Making your own butter is fun too!

Recipe type: Baking
Serves: 10 - 12
  • 1½ cups self-rising flour, sifted
  • ½ cup almond meal, sifted
  • ¼ teaspoon salt
  • ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • 170 grams butter, softened
  • 1 cup xylitol (see Notes)
  • ¾ cup avocado
  • 2 eggs
  • ½ teaspoon pure vanilla powder
  • ¼ cup milk
  • 2 heaped tablespoons plain yogurt (see Notes)
  • 2 tablespoons unsweetened Dutch cocoa powder
  • oil spray (optional)
  1. Pre-heat oven to 160C.
  2. In a large bowl, add flour, almond meal, salt, baking powder, baking sugar; mix to combine; set aside.
  3. In a stand up mixer, combine butter and sugar until well combined.
  4. Add the avocado; mix until well combined.
  5. Add eggs, one at a time, beating in between each egg until combined.
  6. Add vanilla powder;mix until combined.
  7. With a wooden spoon, combine half of the flour mixture, stir gently, then add milk and yogurt then remaining flour mixture until combined.
  8. In a separate bowl, place half the mixture and add the cocoa powder until well combined.
  9. Line a loaf tin with baking paper lightly sprayed.
  10. Spoon dollops of each of the mixtures until done.
  11. Bang the tin on the counter tip. (see Notes)
  12. Bake for about 40 - 50 minutes until the top is brown and toothpick comes out smooth.
  13. Remove from oven, place on wire rack to cool.
  14. ENJOY!
Feel free to substitute caster sugar for xylitol
If wish a healthier dessert, make sure your yogurt does not contain any sugar, fruit or natural added sugar as it is still sugar
For smoother consistency, I used hot water on the back of a spoon to remove any air bubbles and made the surface smooth for consistent baking.

Sooo fun! Shoba chose a great challenge and you answered perfectly, Joanne. The combo of avocado and chocolate is one I’ve often seen in vegan/gluten-free fare. How great that you incorporated the lovely pairing into a “as-usual-extraordinary” cake by Joanne! P.s. So want to visit the inspiring Elbio =)
