Cupcakes-lemon-meringue-whatsonthelistMy name is Joanne aka Joanna aka mickeydownunder aka FANG and I can now PROUDLY say “I am a baker!”
And a funny one at that!

I always believe the greatest ability in one’s life is the ability to laugh at one’s self; boy, do I keep myself entertained!

Let me digress for a minute so I can let you in on what “previously” was my epic cooking flop disaster (one of many lol) as when interviewed as Member of the Month at Food.com last year.

My excuse?
I had a massive concussion?

Can’t use that!
Didn’t know WHAT a rind was?

Nope!

Didn’t know that cream of tartar could work such magic when used in a large quantity?

I think that one will suffice for me today and I “see” behind the computer screens you are all now laughing WITH me!

Looking back, I wish through my tears I would have “thought” to take a photo!

Nevermind, I have the memories that have “haunted me until recently!”

Courtesy of nic&rocco , I was “graciously” extended the courtesy of creating one of their recipes from the new Sweet Sensations Cookbook that they have dedicated to their mums.

Their cookbook can be easily and conveniently ordered direct from nic&rocco’s website!
Cookbook-desserts-pastries-macarons-tarts-whatsonthelistTrust me on this, Sweet Sensations WILL make a GREAT Christmas present and is a foodie and baker’s delight!

Should you wish a view a sample, a quick click over to Woodlands Publishing is “must view”; cookbooks can be ordered with a quick click at their website too!

nic&rocco’s Sweet Sensations is broken down in Macarons, Choux Pastry, Tarts, Cakes, Desserts, Cheesecakes, Sweet Things, and Extras.

Let me tell you, it was not an easy decision for me initially what I would bake as inspired by nic&rocco.

As you may remember, The Cupcake Queen and I attended Rocco’s Macaron Course via Rocco’s Macarons Rule.

Rocco’s Macaron Course is highly recommended!

The Cupcake Queen and I then had macaron homework to do via Rocco’s Macarons Rule Follow Up Mission Accomplished.

So, with macaron accomplished, I went to my next choice, Lemon Meringue Cupcakes to try and overcome my epic flop disaster.

“Did you ever make Lemon Meringue Pie or cupcakes since your initial epic flop disaster,” I “hear” you say?

I never did  until today!
Lemon-cupcakes-dessert-whatsonthelist Lemon-cupcakes-meringue-whatsonthelist What I really enjoy about Sweet Sensations is there is HEAPS of “wonderfully decadently,” “luxuriously delicious” looking photos with step by step instructions that were “very simple and easy’ to follow.

This gave me the courage to overcome my epic flop disaster right away and it “felt” like nic&rocco were cheering me “each and every step of the way!”

nic&rocco’s recipes “really shows off what can be done with few basic ingredients, some seasonal produce, and a few kitchen equipment necessities for any aspiring baker;” JUST like YOU and ME!

I can also say that no matter your level of baking skill or how many previous “epic flop disasters” you have had lol, Sweet Sensations IS for YOU!
Dessert-cupcake-lemon-whatsonthelist lemon-cupcake-meringue-dessert-whatsonthelist Other than nic&rocco’s Macarons, Macaron Fillings, Macaron Tower recipes (to name a few), these recipes will inspire you!

I have always wanted to make Baked Profiteroles, Profiterole Tarts and um, well, gulp, “try” the Croquembouche! …YOU?

What type of tart are you…

going to do?

French Fig & Raspberry, Custard Fruit or French Apple?

All are in Sweet Sensations!

I kid you not today too!

Ever made a Curd Trifle?

Ooooooooooooooooooooooohhhhhhhhhhhhhhhhhhh nooooooooooooooooooooooooooo, nic&rocco in Sweet Sensations shares their Churros with Chilli Chocolate recipe.

For people who have been following my fun filled food adventures, I get “a tad” excited enjoying Churros and brings me back to New York childhood memories when I was three!

Perhaps cheesecakes you WOULD love to make?

Lemon Curd Cheesecake, White Chocolate & Mixed Berry and or Vanilla & Chocolate Rum YOU would like to be inspired to bake?

Sweet Things and Extras …well, I’m NOT going to tell….today!
It gives me Chocolate Butterflies in the most extraordinary way!

Here’s a secret, don’t tell nic&rocco, will you?

Definitely check out the recipe and photo on page 108 as I think it IS great and am SURE it has YOUR name on to make sometime soon!

WHEN you buy your foodie friend Sweet Sensations for the holidays (as giving is better than receiving) (just like every day) is all about fun, trust me you will want to buy one for yourself as will be your Sweet Sensations treat and am sure you can come up with an excuse to treat yourself today, eh?

If I can overcome my “epic flop disaster” and make nic&rocco’s Lemon Meringue Cupcakes that come out THIS GREAT, so can YOU!

NOTE:
Nothing was Photoshopped; these are actual photos I took so I could share them with you!
Desserts-leomon-meringue-cupcakes-whatsonthelistWould YOU like a Lemon Meringue Cupcake or two?

Have you ever have an “epic flop disaster” YOU have overcome?

On a personal note, I must say, thanks to nic&rocco for “graciously” extending the courtesy of allowing me to do a Sweets Sensation Cookbook review!

I FEEL like I have successfully climbed the Mount Everest of baking in overcoming my epic flop disaster all thanks to nic& rocco too!

The words, thoughts and E-X-C-I-T-E-M-E-N-T are all my own and are not as a result of being given this wonderful Sweet Sensations Cookbook by nic&rocco, true!

I can’t wait for their next Our Family Recipes and Desserts for Beginners Cookbooks coming out soon!

    and I definitely think you’re a wonderful baker 🙂
    Beautiful and most delicious cupcakes

  2. Hi Joanne (aka FANG). This is Fran here from G’day Souffle.’ I remember FANG- that was the name Phyllis Diller gave her husband. Now back to food- your cupcakes look great and even better with the brulé effect. Sigh, now my next challenge is to try the Croquembouche! I googled this and Croquembouche means ‘something that crunches in the mouth’ in French. I could go for something like that!

  3. You are a brilliant baker, Joanne! Your lemon meringue beauties would win any cupcake pageant =) When in Australia I’ll have to look up Nic ‘n Rocco =)

  4. Wow, those cupcakes look wonderful Joanne. I’m not normally a cupcake person but have been watching Junior Bake Off with my 6 year old daughter and she’s getting lots of sweet inspiration. We made carrot cupcakes last night for her Grandma’s birthday, topped with garish carrots made from marzipan!

  5. Baking is psychotherapy for me! The cupcakes are irresistible!

  6. Misha says:

  7. You have recreated the cupcakes so well. I love how you piped the meringue and then torched it – it just looks gorgeous. Very professional! Yes, you are now a baker! xx

  8. Baking is such a delicious adventure…I need 2 of all of the above =) Just fabulous, Joanne. Thank you so much for sharing!

  9. baking is such fun Joanne! I’ve just inherited the bug, I used to have a gas oven in my previous house and it either left my dough’s raw or burnt. Could never quite figure it out, and just decided to stop baking. Then I moved house and got my fan forced oven and the bug came back!

  10. Cute cupcakes and a lovely cookbook!

    Cheers,

    Rosa

  11. Joanne, these are beautiful! Years ago I had a big dinner party and 12 year old birthday party for a shit of a little girl. Imagine how I felt when I placed the cake in front of her and it instantly split into two and nearly off the plate. 🙂

    • Thank you Maureen and hope you don’t mind now if I am laughing WITH you! Your little girl…well karma, but sorry you wasted your time and someone who had not learned the lesson in life how to be appreciative…even if something is an epic flop disaster! lol
At least we can laugh together! best medicine ever!

  12. These look really great and you’re obviously having a great time baking.
