IMG_3381Hands up WHO wishes there were more hours  and “Me Time” in a day? 

Don’t you WISH you could “stop the time carousel“, remembering childhood fun and play?  Wink

Who is THE most important person in YOUR life?

I’ll give you a hint, it’s YOU reading this as mum, friend, and or wife!

We all “inadvertently” (at some time is our lives) place labels on ourselves whether career mum, stay at home mum, domestic goddess etc. Laughing

Thanks to Jamie-Lee at Mumwise (who is launching her WONDERFUL website this month), I was asked if I could contribute to her’s site’s philosophy of “live, laugh, share, grow.”

Jamie-Lee’s site will be for AMAZING people JUST like YOU “who have goals, dreams, ideas, & want to grow, motivate, profit” and “inspire.”

website_coming-soonI thought WHAT better way to “inspire” you, than to invite you to my Me Time Before Tea Time Party so you can relax and enjoy! Ready for some tea and a new recipe? Wink

IMG_3392Before I begin, let me “introduce” Aussie lingo for “tea.” It can be used to describe a light meal in the late afternoon. (afternoon is also called “arvo”)

Thanks to BestRecipes.com.au, they too believe “High tea is the ideal way to while away an afternoon – or even celebrate a royal event.”

There IS a royal event happening soon too! Wink

Traditionally, my Me Time Before Tea Time Party Cake Stand is three-tiered.

Psst…if you really want to be “really naughty“, you can change the categories and am sure in posts, I will! Laughing

Tier one — scones
Tier two — sandwiches
Tier three — desserts (formerly known as sweets lol)

I might consider changing tiers as who wouldn’t want to start with dessert first! Wink

Today, I opened my What’s On The List Folder and decided to adapt Nina’s Two-Bite Cheddar Bacon Scones which were adapted from Craft Foxes’ Bite-Size Bacon and Cheese Scones. Very Happy

IMG_3383Ingredients for Joanna’s Me Time Before Tea Time Party Scones and Slice
4 slices smoked pancetta
2 cups plain flour, sifted
2 teaspoons baking powder
1 cup grated cheese (I used a combination of Colby, Mozzarella, Parmesan and Romano)
1/4 teaspoon salt
1/2 teaspoon cracked black pepper
1/2 cup (115 grams) unsalted butter, cubed
1 egg
3/4 cup milk
1 tablespoon lemon juice
1/2 cup dark chocolate chips

In jug, combine milk and lemon juice; Whisk in egg; set aside.

Fry bacon until desired doneness; drain; set aside; crumble.

In a food processor, pulse flour, cheese, salt, pepper; add butter; pulse until pebble like.

Add milk, combine until dough comes together; WILL be sticky! Wink

On floured surface, form dough into a ball, add bacon and choc chips; knead “gently” until combined.

Roll dough to 1/2 inch thickness; cut with cookie cutters.

Place on baking paper lined flat tray.

Preheat oven to 200C. (400F)

Bake for 10 minutes or until golden brown.

Ingredients for Joanna’s Gluten Free Un Sandwich

IMG_3386My recipe  is just a “guide“; feel free to substitute your own ingredients! Wink

Cut cucumber in half; deseed.

I had some bacon left over from my scones, so used smoked pancetta! YUM!

Cut tri-colored capsicum (sweet peppers); saute in pan until chargrilled; add good quality balsamic vinegar. Wink

I layered with my marinated feta I made as part of my Udder-ly Delightful Cheesemaking Class. Very Happy
Added finely shredded lettuce, grated carrot. VOILA!!! Very Happy

Healthy, delicious as can be!

I saved the best for last! BRIGADEIROS!

“What are Brigadeiros?” you ask. Wink

When I ran into “the ghost of Brazilian hero Brigadeiro Eduardo Gomes” last month, he asked me if I had made the chocolate delicacy that was made in his honor.

I, um, well, “have it on the list“, I said! Embarassed

He asked if I knew the candy was named after his military rank.

I said, I didn’t but I now do! Wink

And now you do too! Very Happy

So, I knew for my first Me Time Before Tea Time Party Series, my friend Brigadeiro Eduardo Gomes Brigadiero’s I would have to make!

They are VERY easy and simple to make, TRUE!

I had saved Marion’s Chocolate Fudge Truffles — Brigadieros in my folder What’s On The List.

Boy, am I glad this recipe for my Me Time Before Tea Time Party Series, was not missed!

I “slightly” adapted the recipe to create Joanna’s Tribute to Eduardo’s Brigadieros!

395 grams (~ 14 ounces) Nestle’s Sweetened Condensed Milk
4 tablespoons Organic cocoa powder Dutch processed
1/4 teaspoon Himalayan pink salt
45 grams (~ 3 tablespoons) butter
1/8 teaspoon vanilla powder
Gewürzhaus Mayan Chilli Chocolate Spice to coat
Extra butter for hands! Shocked

In heavy saucepan, add milk, cocoa powder and salt; stir “constantly” over low heat for about 10 minutes or until mixture starts to come away from the bottom and sides of the pan; mixture will be “barely” boiling! Wink

Remove from heat; stir in butter and vanilla powder until “well combined.”

Refrigerate for 30 minutes.

Grease hands with butter. Roll mixture into a ball then roll mixture into Gewürzhaus Mayan Chilli Chocolate Spice; refrigerate until ready to serve! Very Happy

Eduardo will be SO happy I made these today, TRUE!

I made one for me, one for you and one for Eduardo in case his spirit is hungry too! lol

    I have not had me time in a while! How lovely your little spread looked and the food looks amazing! As did the chili. We can only get the white and orange cauliflower here! Have a lovely day!

    I miss having some tea time and I do love sitting down and enjoy tea with some sweets and baked goods. My kids schedule don’t really allow me to have such time. This is a dream tea party. 🙂
