It is great fun to see what recipes people make and photographs are “food fun” to see!

Previously, I asked Are You Curious How the Cook Along Went Today?

I loved Leonie’s Pasta with Vodka Sauce!

The recipe was simple to follow and as you know my passion is minimizing food wastage, so I used ingredients I had on hand.

To cover the basics, there is penne pasta, vodka, …. did I mention vodka? lol

Tomatoes, cream and while Leonie’s recipe “as a guide” suggested bacon, I had some beautiful speck; that worked for me!

What I enjoyed about the recipe was the ease of chopping and Thermalina virtually cooked it herself; I did supervise!

I used a tad less vodka and fresh herbs from the garden!

Thermalina would like me to share HOW easy it is to grate cheese in the Thermomix using the rind and all, saving money, minimizing food wastage.

Here’s was the MYSTERY BOX challenge from Leonie:

The ingredients were:
450g self raising flour
500ml milk
2 eggs
salt & freshly ground black pepper

And to “have fun!”

Cheese, Bacon and Spaghetti Pie Recipe (a Club membership recipe) is one of the recipes shared by ThermoFun for Week 46!

With the weather being so unpredictable here, I saved the recipe and thought it would be perfect “on a rainy day.”

The recipe looked and sounded so “warm and welcoming” and reminded my of “childhood food fun” of a similar recipe my mum used to do; pre Thermomix of course!

What I personally enjoy about Leonie’s recipes is they are easy to do, the ingredients are easily assessable locally and while making the recipe is a challenge within itself, I always like to “be inspired” using up ingredients I have on hand.

Probably due to the rainy weather today, all I wanted to do is close my eyes and whisk myself off to the “warmth” of the Mediterranean!

So, today’s creation definitely has the Mediterranean “flavor and feel!”

Mediterranean Cheese, Bacon & Spaghetti Pie {Thermomix Assisted}

Are YOU curious about Mediterranean Cheese, Bacon & Spaghetti Pie {Thermomix Assisted}

Ingredients
  • 150 grams dried spaghetti
  • 65 grams Dodani feta, crumbled
  • 65 grams Didano goat's cheese, crumbled
  • 150 grams carrots, quartered
  • 230 grams zucchini, quartered
  • 100 grams cooked bacon pieces
  • 2 tablespoons black kalamata olives, pitted, sliced
  • 2 tablespoons sundried tomatoes in oil, drained
  • 5 Rohde's Free Range Eggs
  • 1 -2 tablespoons dried chives
  • rocket (for garnish - optional)
  • salt and pepper to taste
  • oil spray
Instructions
  1. In a large bowl, combine feta and goat's cheese with chives; set aside.
  2. Cook pasta according to package; drain, set aside.
  3. Place carrot, zucchini, sundried tomatoes, kalamata olives, salt and pepper to taste in TMX bowl; 8 seconds speed 5; wipe down; repeat if necessary in 2 second intervals until desired consistency.
  4. Add eggs; Reverse; speed 2 1 minute; mixture should be well combined.
  5. Oil spray a casserole pan; pour cooked spaghetti on bottom; top with cooked bacon pieces; pour egg mixture over; bang pan so mixture is evenly distributed.
  6. Top with cheese and chive mixture.
  7. Pre heat oven to 180C.
  8. Bake for about 30 minutes or until top gets brown. If pie starts to get too dark on top, can cover with baking paper until cooked; when toothpick comes out clean.
  9. Enjoy! (see Notes)

    Hi Joanne, I just love your creativity and Foodie passion….your tweaking of this recipe is downright amazing…and I will further tweak it to suit my not-so-adventurous family. I’d just like to inspire your followers to seriously check out the ThermoFun Cookalong. I’d had my TM over 2 years and was using it about 2-3 times a month UNTIL June when I found the ThermoFun web page and joined in the first week-long Cookalong. Four Cookalongs later and I have gained confidence to tweak, sub & experiment. We are a family of 6 and I cannot sing Leonie’s praises loud or long enough for the time and dedication she gives to providing us with such solid family-friendly recipes…and the FUN and SUPPORT of the shared learning experience in her members pages has certainly turned our family’s mundane mealtimes into a wider appreciation of how food brings us all together regularly to provide opportunity to share and care for each other. Cannot wait for Cookalong to begin again…LOVE seeing everyone’s flair and creativity ignite!…oh and so glad prizes are based on “giving it a go” rather than the “finished result” as it really highlights Leonie’s passion for everyone to get out of their comfort zone and get the most out of using their machines. 🙂 Only 2 more sleeps…..
